Wiring up a fan (electronics)

I am currently looking at getting a fan wired up for a laminar flow hood I’m building, and I’m rather out of my depth on the electronics! I was thinking of popping down to an electronics night but thought it may be better to get some insight on necessary components/etc before hand. Any guidance would be immensely appreciated.

Ideally the fan will be mains powered, potentially with speed adjustment wired in. Initially this seemed fairly simple, connecting up a mains plug with the controller in series, but after picking up the fan, I’m not so sure!

There’s a 3 out (mains wiring) and a 4 out. Diagram seems to suggest that the 4 out is for an interface.

I’m not fussed about utilising an interface (other than controlling the speed), but I assume it wouldn’t be correct to just leave the crimped wires in situ…! Any advice on how to go about wiring up to mains, with a variable speed controller would be amazing.
