Tofu press version 2

I’m not vegan by any means but I enjoy making tofu from scratch.
Last summer I spent far too long trying to hand cut straight lines and dove tails in my garden and used a hand drill to make the (uneven) holes which tended to wander off centre.

The end result is a pleasing aesthetic and I’ve made some good tofu blocks with it but I’m keen to try and make a more functional version with machine assisted straight lines and pillar drill for the holes.
So looking forward to getting some further woodwork induction.

That is really cool. I like tofu when other people cook it cus I just make eyebrow raising yuck when I do and have to throw it out (which I really don’t like to do). Any tips you have would be great!

Ha! I’ve never had problems so happy to share my method.

I use Nigari as coagulant which gives a smooth and firm result when pressed.

Inspired by William Shirleff’s (slighly optimistic) tofu manifesto, I will often use the biproducts -whey in breadmaking and okara as a high fibre granola or mixed in with eggs.
