There are others with more experience and knowledge than me, but FWIW I’d consider using Paraloid B72 for this. It’s used by conservators and would be plenty strong enough. As well as an adhesive, it can be used for consolidating friable material e,g. it’s been used on Medieval wooden picture frames that are crumbling. It’s clear and a bit like epoxy, only easier IMO. It’s also reversible as can dissolve it with acetone. You could also fill voids by making some sawdust from the same material and mixing that with the Paraloid - a kind of reconstituted wood. I’ve not tried it on the lathe, but I’d guess it might be better on the lathe than epoxy. And it dries quite quickly, which could be a help.
Either clear or coloured is fine, whichever’s easiest. My main priority is for the blanks not to go to waste, so either’s fine as long as it’s possible to turn them.
