Can they be switched fast enough using something arduino esque to get anything like a decent sampling rate? I want something ridiculous like 100Hz or some business, which seems like would be doable with one of those magic ESP boards (I want WiFI, lots and lots of Wifi).

It’s just a CD74HC4067 , so has so expect a bit of gliching on switching and switching at 1600hz should be OK as long as you let it settle down before sampling .
Good chip but it’s old so check the input voltage range as I suspect that you are going to become very fermiler with that sort of thing
Remember it’s not a perfect swich. But it works well if you get the right inpedences right around it .
It’s the hct type so make sure you use that datasheet it should be a lot better than the old 40 type
If you lock your sample rate to the mains it will save you a lot of headaches with the ubiquitous 50hz field we live in
